Super Vegetarian Spaghetti
What comes to mind when you think of spaghetti? Pasta, sauce, blah, blah, blah....That's all about to change! Be sure you have an open mind ready when it comes to this one! It passed approval of 4 small children, they didn't even notice what was in it until I told them when they were done!
Let's get the ingredient list together first:
1 Box Spaghetti
1 Jar Spaghetti Sauce of your choice
1 Can Navy Beans (small white beans)
8 oz Fresh Spinich Leaves
1/2 to 1 cup water, as needed
Chop Spinich in a food processor until fine. It will look like Parsley when you are done.
Process whole can of beans with liquid in the food processor until completely smooth. This is the key. Do not leave any lumps that will be a dead give away to the beans!
Boil Spaghetti as usual.
Empty sauce into a medium saucepan. Add the processed beans and spinich. Add water until you have your desired consistency. Heat as usual. Serve over Spaghetti!
My husband, who is a pretty picky eater, gave this his approval! He said it is the best spaghetti he has ever tasted! You honestly cannot tell there are beans or spinich in there, it just all comes together for great flavor!
This is super healthy, packed with fiber and protein!
